Ingredients: 1 flour tortilla- 1 to 2 large eggs – salt & pepper to taste – 1 TBSP butter – 3 TBSP shredded cheese of your choice
Directions: Beat egg, season with salt and pepper. Heat skillet on medium heat. Melt the butter. Add the egg and lightly swirl it around the skillet until it forms a round shape. Allow the egg to slightly cook around the edges. While center of the egg is still wet, lay a tortilla on top of the egg. Lightly release the eggs from the edges of the pan. Once the egg edges are set, flip the egg and tortilla together so the tortilla lays down on the pan. Sprinkle cheese on top of the egg. Allow to cook for 1 minute or less. Fold the tortilla over and continue cooking both sides of the tortilla on the pan until it’s slightly golden brown. Serve warm with hot sauce, guacamole or salsa. Enjoy!
