Homemade Cornbread

Sweet cornbread! Honey, butter or both? Fluffy, slightly sweet & dangerously good with melted butter or drizzled honey on top : )  A perfect side for holiday meals or barbecues. My Grandmom was a southern lady who loved her some cornbread. 

I’ve made several cornbread recipes over the years — this particular recipe includes honey. Love it! Bake as muffins or in a cast iron skillet. Delicious!

Thanksgiving/Friendsgiving is approaching fast. Sarcastically speaking, I’d like to know whose bright idea it was to arrange the holidays one month apart? Lol. My sister and I use to host Thanksgiving with our family. The preparation was both exhausting and fun. Our family wasn’t picture perfect — we would laugh hard, argue and eat. Ingredients: 1 cup yellow cornmeal – 1 cup all purpose flour – 1 TBSP baking powder – 1/2 cup granulated sugar – 1 TSP salt – 1 cup milk – 2 large eggs – 1/2 stick butter, melted – 1/4 cup honey 

Instructions: Preheat the oven 400 degrees. In a large bowl, mix the cornmeal, flour, baking powder, sugar and salt. In another bowl, whisk together the whole milk, eggs, butter and honey. Add the wet ingredients to the dry and stir until mixed. Place muffin paper liners in a 12 cup muffin tin. Divide evenly into the papers. Bake 15 minutes until golden.
